Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed no hand wash sign provided for hand sink in the front service line (pasta) **Corrected On-Site**
24-18-4    Basic - Silverware/utensils stored upright with the food-contact surface up. Observed spoons and spatula upright stored on the counter. **Corrected On-Site**
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed fresh olive oil and garlic used at pasta stations left at room temperature front service pasta line. No written plan per Manager time 12pm -2pm less than 4 hours given time plan at time of inspection. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed piece of old debris left on the slicer located on the main cook line.
