Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed pans squeeze bottles at cooks line not properly labeled. **Warning**
46-04-4    Exit door locked. For reporting purposes only. Observed side exit in dinning room end of counter lock.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at 000 ppm chlorine sanitizer. instructed operator they may use the machine to wash dishware and utensils, but must use three compartment sink to sanitize items once they come out of the dish machine and then allow items to properly air dry. **Warning**
14-86-1    High Priority - Non-food grade paper/paper towel used as liner for food container. Observed plastic glove used to wrap cheese block in walk-in cooler. **Warning**
41-05-4    High Priority - Pesticide/insecticide labeled for household use only present in establishment. Observed can of pesticide on shelf at back storage area. **Warning**
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed utensil the following items at cooks line make: shredded cheese 63F, cream sauce 50F, dice tomatoes 56F, sautéed onions 51F, sautéed peppers 57F, dice ham 60F, cooked sausage 65F, cheese 64F, shell eggs 49F. Operator voluntarily disposed of all above items. **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed utensil the following items at cooks line make: shredded cheese 63F, cream sauce 50F, dice tomatoes 56F, sautéed onions 51F, sautéed peppers 57F, dice ham 60F, cooked sausage 65F, cheese 64F, shell eggs 49F. See stop sale. Observed cut fruit cups at wait staff area not properly time marked. Operator corrected above issues to meet inspection standards. **Warning**
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed imitation crab block of cheese in walk-in cooler employee stated the commercial items listed above had been opened more than 24 hours prior, then proceeded to date items properly to meet standards of inspection. Operator corrected above issues to meet inspection standards. **Warning**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed pot of cooked beans in walk-in cooler Employee stated the above items had been prepare onsite more than 24 hours prior , and then proceeded to date items properly to meet standards of inspection. Operator corrected above issues to meet inspection standards. **Warning**
