Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Observed employee engaging in food preparation while not wearing a proper hair restraint. **Warning**
08B-38-4    Basic - Food stored on floor. Observed a case of raw shell eggs on the floor at walk in cooler. Operator placed item on shelf. Observed multiple cases of fry oil stored on floor at rear of kitchen area. **Corrective Action Taken** **Warning**
22-16-4    Basic - Reach-in cooler/ Walk-in cooler interior/shelves have accumulation of soil residues. Observed top shelf at walk in cooler soiled with debris. **Warning**
29-49-6    Basic - Standing water in bottom of reach-in-cooler. Observed standing water at reach in cooler at front counter. **Warning**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth at kitchen area not stored in sanitizing solution. **Warning**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed BROTH (109F - Hot Holding) at kitchen area. Manager reheated broth to a final temp of 168F. **Corrected On-Site** **Warning**
53B-02-5    Intermediate - No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
