A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean utensils stored between equipment and wall. Observed four cleaned spatulas stored between sink and wall at triple sink in kitchen. **Warning**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
1. Observed employee personal Cell phone and AirPod case stored on food slicer at prep table in prep area. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
1. Hood filters above cookline in kitchen.
2. Door gaskets at three door beverage air reach in cooler in prep area. **Warning**
Basic - Wet mop not stored in a manner to allow the mop to dry. Observed wet mop stored in mop bucket in prep area of kitchen. Operator removed. **Corrected On-Site** **Repeat Violation** **Warning**
Basic - Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed stored on cleaned utensil rack, next to and above cleaned utensils opposite triple sink in kitchen. **Warning**
High Priority - Live, small flying insects found
1. Observed approximately 10 live, small flying insects resting and flying on garbage container and wall at hand sink in kitchen.
2. Approximately 20 live, small flying insects flying and resting on onions in food prep area.
3. Approximately 40 live, small, flying insects resting on canned goods, mops, and food storage rack in dry storage area.
4. Approximately 5 live, small flying insects flying and resting on packaged beverages in dry storage hallway. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed a container of portioned raw steak stored directly on top of container of cooked pork in single door reach in freezer in kitchen. **Warning**
