Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-09-1    Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. 2 pieces of raw salmon and 5 pieces of raw mahi fully thawed in ROP packages.
36-73-4    Basic - Floor soiled/has accumulation of debris. Under equipment on cooks line next line.
08B-38-4    Basic - Food stored on floor. Bulk rice on floor in kitchen. Pickles on the floor in walk in cooler. **Repeat Violation**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Tongs on oven door handle.
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Microwaves in kitchen.
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. Reach in freezer on cooks line.
25-05-4    Basic - Single-service articles improperly stored. Bulk box of clear cups on floor in kitchen. **Repeat Violation**
08B-12-5    Basic - Stored food not covered. Cut Lemons and limes in reach in cooler. **Repeat Violation**
41-07-4    High Priority - Container of medicine improperly stored. First aid antiseptic alcohol on prep table in kitchen.
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. 2 pieces of raw salmon and 5 pieces of raw mahi fully thawed in ROP packages.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Cutting boards in kitchen.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Rice in walk in cooler.
