Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed : drink on the prep table by the office. This was placed in the speed rail. **Corrected On-Site**
14-42-4    Basic - Hood filter missing from automatic fire suppression/exhaust system. Observed : 1 filter missing at the smaller fry station.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Observed : the left faucet at the 3 compartment sink leaks hot water constantly. The right faucet drips intermittently. A work order was put in this morning. **Corrective Action Taken**
22-43-4    High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed : the 3 compartment sink at 0 ppm for quaternary ammonia. The leaking faucet may have overfilled and diluted the sanitizer. The sink was dumped and refreshed.200 ppm quaternary ammonia. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : raw chicken at 46° in the chefs table on the cook line. This was placed in the walk-in freezer and drooped to 40° in 11 minutes. **Corrected On-Site**
53B-10-4    Intermediate - Records/documents for required employee training do not contain all of the required information. Observed : dates of birth missing on 2 certificates.
