Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed floor tiles in disrepair by cook line. **Repeat Violation**
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Observed between reach in coolers across cook line.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed at reach in cooler at kitchen.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed reach in coolers gaskets soiled throughout establishment. **Repeat Violation**
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Observed reach in coolers. **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. **Repeat Violation**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses.
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw beef over raw fish at reach in cooler near hand sink at kitchen. Observed raw chicken over raw steak at reach in cooler near hand sink at kitchen.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked oxtail and vaca frita held more than 24 hours not properly date marked at reach in cooler near hand sink. Observed cooked rice and cooked chicken held more than 24 hours not properly date marked at walk in cooler.
