A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food.
Observed foam cup not handle used to dispense cheese.
Operator discarded the foam cup. **Corrected On-Site**
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner.
Observed plates stored on top of prep area not inverted. **Corrected On-Site**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
Observed ice cream scoop and ice scoop inside ambient temperature water.
Operator placed the scoop in a clean dry container. **Corrected On-Site**
High Priority - Nonfood-grade bags used in direct contact with food.
Observed black trash used to store pizza dough and thank you bags used to store pizza. **Repeat Violation**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Observed to faucets with not vacuum breaker. **Repeat Violation**
Intermediate - Handwash sink used for purposes other than handwashing.
Observed handwashing sink with a plastic container and a strainer. **Corrected On-Site**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
Observed inside reach in cooler at kitchen, container with cooked chicken wings, according to the manager prepared last Friday no date labaled.
Intermediate - Records/documents for required employee training do not contain all of the required information.
Observed food handler certification missing date of birth. **Corrected On-Site**
