A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed staining, mold like substance on interior of ice machine.
Also, makeline cutting boards with staining.
Also, soda nozzle at bar with mold like substance buildup. **Repeat Violation**
Basic - Floor area(s) covered with standing water.
Observed standing water on the floor in the sever area, in the bar.
Ceiling tiles over walk in cooler missing. Missing ceiling tile in hallway with reach in freezer/ dry storage.
Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container.
Observed tongs in several raw meat products with handles touching meat.
Basic - Single-service articles improperly stored.
Case of to go containers stored on floor in server area. Person in charge raised. **Corrected On-Site**
High Priority - Food stored in ice used for drinks. See stop sale.
Observed canister of whipped cream stored in drink ice in the ice machine. Person in charge removed. **Corrective Action Taken**
High Priority - Roach activity present as evidenced by live roaches found.
Observed one live roach on counter in women's restroom. Killed and discarded. **Corrected On-Site** **Warning**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition.
Observed canister of whipped cream stored in drink ice in the ice machine. Person in charge removed.
Also, observed two shell eggs in walk in cooler with cracked shells.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
In drawers on cook line chicken, steak, steak 46-50F. Observed drawers not fully closed during inspection. Person in charge added ice to items, closed drawers fully.
At server area salsa on ice at 55F. Small amount of ice observed in tub. Person in charge added ice. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
High Priority - Toxic substance/chemical improperly stored.
Observed spray bottle with purple chemical stored hanging on shelf with nozzle facing condiments. Person in charge removed. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
Intermediate - No soap provided at handwash sink.
No soap at cook line hand wash sink.
Also, missing soap at main men's restroom hand wash sink. Person in charge began replacing. **Corrective Action Taken**
