A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle.
Basic - Time/temperature control for safety food thawed in an improper manner. Observed horchata under grill thawing in standing water, per operator stored there for 10 minutes. Spoke with operator regarding proper thawing technique, operator moved into reach-in cooler for proper thawing. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On counter mozzarella (78F - Cold Holding) for 30 minutes to an hour per operator. Operator returned to reach-in cooler for rapid cooling until ready to prepare foods. **Corrective Action Taken**
Intermediate - Handwash sink not accessible for employee use at all times. Bags, food in sink, chair and food storage bin completely blocking handwash sink. Operator cleared all items to allow full access to sink.
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No chlorine test kit available for sanitizer.
Intermediate - Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Hot water for unit shut off, measuring 77F. Operator restored hot water, new temperature 92F **Corrected On-Site**
