Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-32-5    Basic - Ceiling/ceiling tile shows damage or is in disrepair. Observed several ceiling tiles in disrepair.
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling vents in kitchen area soiled.
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed several white cutting boards in the kitchen area with cut marks and no longer cleanable.
35A-03-4    Basic - Dead roaches on premises. Observed six dead roaches on the floor next to back exit door. Operator discarded. **Corrected On-Site**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed gap at back exit door by the kitchen.
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed floor underneath cook line soiled.
08B-38-4    Basic - Food stored on floor. Observed gallon of cooking oil in floor next to cook line.
36-24-5    Basic - Hole in or other damage to wall. Observed wall near back exit door damaged.
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed scoop handle touching flour inside bin of flour at the dry storage in the kitchen.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed kitchen utensils stored in standing water at 74F at the cook line.
14-73-4    Basic - No container installed for catching grease from hood drip tray. Observed no grease container installed at the cook line.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hood filters at the cook line soiled. Observed reach in cooler gaskets across the cook line soiled.
16-46-4    Basic - Old labels stuck to food containers after cleaning. Observed several plastic and aluminum containers in the dry rack with old labels.
03G-53-1    Basic - Time/temperature control for safety food packaged using a reduced oxygen method without a HACCP plan not properly labeled with the production time and date. Observed ROP bags of chick peas with no label inside walk in cooler. As per operator, product was packaged yesterday. Operator labeled date and time packaged. **Corrected On-Site**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed walk in cooler shelves with rust accumulation.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed walls throughout the kitchen area soiled.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth in cutting boards not stored in chlorine sanitizing solution.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed working containers with seasonings next to cook line with no label.
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed cooked potatoes (68F - Hot Holding) at the steam table. As per operator, product has been there since last night. Operator discarded. **Corrected On-Site**

31B-03-4    Intermediate - No soap provided at handwash sink. Observed no soap at the hand wash sink near ware washing area.
22-31-4    Intermediate - Non-pitting surface rust on food-contact equipment. Observed food contact shelves at the dry storage area with rust accumulation.
