Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

At front line reach in cooler; unpasteurized "raw" milk, labeled "not for human consumption", stored with bottled soft drinks and bottled water. Operator stated unpasteurized "raw" milk, labeled "not for human consumption" for employee consumption only, no for sale to customers Advised Operator to remove from cooler.
25-32-4    Basic - Reuse of single-service or single-use articles. Single-use milk containers re-used for drinks mixed/prepared on-site. Advised Operator to not re-use single-use articles.
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee entered kitchen after taking orders at front line, put on gloves and began handling raw steak to cut without washing hands. Discussed with employee who then washed hands. **Corrected On-Site**
12A-11-4    High Priority - Employee used the bathroom and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands upon returning to employee area. Employee used restroom then walked onto service line, handled clean equipment and utensils to prepare food for customers without washing hands. Discussed with employee who then washed hands. **Corrected On-Site**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. At walk-in coolers; raw pork stored over unwashed peppers. Operator moved raw pork to bottom shelf. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At prep area; raw steak (73F - Cold Holding). Operator stated not prepared or portioned, held at room temperature less than 2 hours, moved to walk-in cooler. **Corrective Action Taken**
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking.
