A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

High Priority - Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands.

High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
1.At cook line 3 door true freezer ; raw fish stored over cooked mushrooms. Operator moved fish to lower shelf .
2.Walk in cooler raw pork stored over cooked beef. Educated operator on proper separation. Operator moved raw pork to bottom shelf . **Corrected On-Site** **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
2 live roaches seen crawling behind stove at cook line.
1 live roach behind trash can next to del-field freezer.
1 live roach on the side of 3 door true freezer in kitchen next to fryer. **Warning**
Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items.
