Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal food not properly identified and segregated from food to be served to the public.
Several bags of ice for employees personal use not segregated or identified in the kitchen reaching freezer. Employee removed ice at time of inspection. **Corrected On-Site**
Basic - Mobile food dispensing vehicle is not self-propelled or otherwise movable from place to place.
Observed multiple large wood structures built in front of and on the side of the MFDV, multiple raised plant beds on ground surrounded the mfdv, a restroom built with wood enclosure next to the MFDV. A wooden wall with flowers and soil in front of towing hitch so it's unable to be towed. **Repeat Violation** **Admin Complaint**
High Priority - Chlorine sanitizer used to sanitize clean in place equipment not at proper minimum strength. Do not use equipment not properly sanitized.
Chlorine tested at over 200 PPM, employee readjusted chlorine to 50 PPM at time of inspection. **Corrected On-Site**
High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands.
Observed two employees exiting and entering food truck and began handling food about first washing hands. Discussed proper hand washing with employees.
High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized.
Observed one employee washing guacamole bowls and soapy ladle at three compartment sink and not sanitizing after.
High Priority - Live, small flying insects found.
Observed one live flying insect inside food truck. Flying insect is landing on multiple kitchen prep tables and on the reach in cooler lids for pizza mix station, salt and sugar containers next to three compartment sink.
Employee removed flying insect from inside MFDV at time of inspections.
Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days.
