Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-09-1    Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. 2 yellowtail tuna 8 mahi

02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Tuna rub seasoning not labeled on cook line.
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. 2 yellowtail tuna not removed from vacuum packaging prior to thaw. 8 mahi
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. In employee bathroom next to cook line. **Repeat Violation**
01C-02-4    Intermediate - Establishment not maintaining clam/mussel/oyster tags for 90 days. Clam tags missing.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Broom, dust pan, speed rack and prep cooler next to hand wash sink on back prep line. Manager removed dust pan and broom. **Corrected On-Site**
31B-05-4    Intermediate - Paper towel dispenser at handwash sink not working/unable to dispense paper towels. Dispenser at inside bar , paper towels not coming out. Manager replaced paper towel roll. **Corrected On-Site**
