Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee drink on prep table across from cook line. **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Gaps on the side and bottom of back door. **Repeat Violation**
14-38-4    Basic - Food storage container/container lid cracked or broken. Lid for sugar container across from back door.
08B-38-4    Basic - Food stored on floor. Case of cooking oil stored on cook line floor. Plastic container of soy sauce stored on floor in walk-in cooler. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Mop sink in back of kitchen. **Repeat Violation**

31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Pans stored in hand washing sink next to walk-in cooler. Manager removed pans during inspection. **Corrected On-Site**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at hand washing sink next to walk-in cooler. Manager provided hand towels during inspection. **Corrected On-Site**
02C-04-5    Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Pork and chicken stored in reach-in cooler across from cook line fryer, manager stated it was prepared and placed in freezer on 8/7. Pork and chicken stored with no date marked.
27-16-4    Intermediate - Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Front counter hand washing sink, 77F.
