A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Interior heavily soiled with black mold like substance. **Repeat Violation**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Employee drink stored on top of ice machine. **Repeat Violation**
Basic - Reach-in cooler interior/shelves have accumulation of soil residues.
Interior of double door reach in cooler soiled with dried food debris and dried brown substance.
High Priority - Operating with an expired Division of Hotels and Restaurants license.
License expired since 2/1/2025. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Food items stored in triple display grab and go display cooler in dinning room area:
beef stroganoff (47F - Cold Holding); fajita chicken bowl (47F - Cold Holding)
Observed ambient thermometer in cooler reading at 48 degrees.
Items moved into the double door freezer to bring down the temperatures rapidly. **Corrective Action Taken**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
No quaternary or chlorine test kit observed.
Intermediate - No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses.
For employee who is currently on site who is engaging with making drinks and smoothies.
Intermediate - Paper towel dispenser at handwash sink not working/unable to dispense paper towels.
Sign on dispenser states it is broken. Hand sink across from three compartment sink.
Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
