Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-05-4    Basic - Cardboard used to line food-contact shelves. There is cardboard lining multiple shelves in the walk in cooler.
50-09-4    Basic - Current Hotel and Restaurant license not displayed. There is no license displayed on premises.
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. There is a knife stored between two make tables in the kitchen. Operator removed the knife. **Corrected On-Site**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees in the kitchen and next to the triple sink or in the restroom used by employees.
01B-07-4    High Priority - Food with mold-like growth. See stop sale. In the single door make table cooler 1/2 pound of provolone cheese with a mold like substance. In the walk in cooler 3/4 pound of provolone cheese with a mold like substance, 3/4 pound mozzarell with a mold like substance. See stop sale.
50-17-3    High Priority - Operating with an expired Division of Hotels and Restaurants license. **Admin Complaint**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. There is dried food debris on the slicer.
22-38-5    Intermediate - No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Operator provided chlorine sanitizer during the process of the inspection. **Corrected On-Site**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. There is ore portioned lasagna in the make table cooler with no date marking. Per operator the lasagna was prepared, frozen and removed from the freezer three days ago.
53B-05-5    Intermediate - Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Food handlers training for Sergio and Julio are expired.
