Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner.
Observed ice bucket stored on floor and not inverted by ice machine near rear exit. **Repeat Violation**
Basic - Cutting board has cut marks and is no longer cleanable.
Observed cutting board with grooves and no longer smooth and easily cleanable stored by three compartment sink. **Repeat Violation**
Basic - Employee eating in a food preparation or other restricted area.
Observed employee chicken wings stored in to-go box next to fryer station. Employee voluntarily discarded. **Corrected On-Site**
Basic - Equipment and utensils not properly air-dried - wet nesting.
Observed blue plastic cups stacked on top of each other with visible signs of moisture and unable to air dry stored at server station. **Repeat Violation**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
Observed scoop for cooked rice stored in bucket of standing water next to rice cookers.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed soiled gaskets on all reach in cooler doors. **Repeat Violation**
Basic - Old labels stuck to food containers after cleaning.
Observed old labels stuck to clean containers stored in walk-in cooler. Container had cooked chicken bad an old label stating "Spoons."
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
Observed raw scallops stored over ready to eat cooked crab in standing reach in cooler across from crab boilers. Person in charge rearranged food items to proper storage levels. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
Intermediate - Handwash sink used for purposes other than handwashing.
Observed leftover beverage ice dumped in hand wash sink and wiping cloth stored on side of hand wash sink behind bar.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Observed no paper towels at hand wash sink on front line near dish machine.
