Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-22-4    Basic - Floor area(s) covered with standing water. There is standing water on the floor in front of the utility sink on the cook line. Operator mopped the area. **Corrected On-Site** **Warning**
24-18-4    Basic - Silverware/utensils stored upright with the food-contact surface up. There is a rack of clean silverware with the forks stored with the food contact surface up in a shelf in front if the office. **Warning**
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. There are four five gallon containers of frozen eggs thawing at room temperature in the kitchen. **Warning**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. There is a garbage can in front of the hand washing sink in the dish area. **Warning**
02B-01-5    Intermediate - Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. The smoked salmon and poached eggs on the menu are not identified as raw or undercooked. **Warning**
