A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands.
Employee handled raw bacon, changed gloves, then proceeded to handle bagel to be toasted without washing hands. Discussed with operator and employee. Employee removed gloves and washed hands and put on new gloves **Corrected On-Site**
High Priority - Ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days after opening/preparation. Observed in walk-in cooler muffin bater(with opened liquid eggs) date marked 12/08. See stop sale.
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening.
Opened gallon of milk in front walk in cooler not date marked. Operator stated milk was opened 2 days ago. Operator date marked **Corrected On-Site**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator unable to prove quaternary test kit at time of inspection
Intermediate - Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Establishment probe thermometer calibrated at 170F. Discussed with operator
Intermediate - Soap dispenser at handwash sink not working/unable to dispense soap.
Handwashing sink in bakery area soap dispenser did not dispense soap. Soap removed from dispenser to manually obtain soap. **Corrected On-Site** **Repeat Violation**
