A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Food stored on floor.
Observed container of oil stored on floor in dry food storage area. Operator removed container of oil to properly store. **Corrected On-Site** **Repeat Violation**
Basic - Reach-in cooler interior/shelves have accumulation of soil residues.
Observed interior and shelving of reach-in cooler next to reach in deep freezer at end of cook line soiled.
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
Observed employee come into kitchen from outside and put on gloves to work with food without washing hands. Operator discussed with employee and employee washed hands. **Corrective Action Taken**
High Priority - Live, small flying insects found
Observed=ed one flying insect next to clean plate storage and one flying insect in bar area. Operator killed both flying insects. **Corrected On-Site**
High Priority - Toxic substance/chemical improperly stored.
Observed spray can containing toxic substance stored on shelf next to dry food storage area. Operator removed can of WD40 to properly store. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed cutting board on reach-in cooler on cook line soiled/ stained.
Intermediate - Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink.
Observed no hot water at hand wash sink across from soda machine in front service area.
