The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

High Priority - Raw animal food stored over/not properly separated from ready-to-eat food...raw ground beef with roast beef contacting each other in reach in cooler . Operator properly stored. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit....uncooked french fries 66F at kitchen, food not prepped today , food being held less than four hours. Operator time marked. **Corrective Action Taken** **Repeat Violation**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening...shredded mozzarella cheese, shredded American cheese, slice cheese in ziplock bags in reach in cooler . Per operator cheese was opened 3 days ago . Advised operator date marked.
Intermediate - Handwash sink not accessible for employee use at all times....blocked by French fries shelf at kitchen. Operator removed. **Corrected On-Site**
Intermediate - Handwash sink used for purposes other than handwashing... stored container in handwashing sink at kitchen. Operator removed. **Corrected On-Site**
Intermediate - No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses... per operator all employees are new within 2 weeks . Not provided signing form for employee health policy.
