The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Establishment open and operating preparing food for the public with license that expired June 1, 2025. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
On prep table next to dough mixer, butter (63F - Cold Holding). Employee stated it has been out for approximately 1 hour. Inspector went over time as a public health control with employee and employee labeled butter pan for four hours. Inspector sent time paperwork to establishment. **Corrective Action Taken**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening.
In reach in cooler on cook line, pan of ricotta cheese and Alfredo sauce not date marked. Employee stated both are pulled from freezer and put in pan directly onto cook line. Ricotta cheese was put in cooler Sunday and Alfredo sauce was put in cooler Saturday. Employee put date marks on products. **Corrected On-Site**
Intermediate - No soap provided at handwash sink.
No soap provided at handwash sink near front counter and handwash sink at end of cook line. Employee refilled both soap containers. **Corrected On-Site**
