Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Also, floor under dry storage shelves soiled with food debris. Also, floor under both reach in cooler soiled with food debris. 08B-38-4    Basic - Food stored on floor. In walk-in freezer, multiple food boxes stored on floor.
33-19-4    Basic - Garbage on the ground and/or pad around dumpster. Trash on ground in dumpster enclosure.
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Ice buildup up on fan unit and food boxes in walk-in freezer.
33-11-4    Basic - Missing drain plug at dumpster. On shared dumpster to left of establishment, drain plug missing. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Multiple gaskets soiled throughout establishment. Also, hood filters above cook line soiled with dust/grease build up. Also, table under grills on cook line soiled with food debris. **Repeat Violation**
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. Interior and exterior of both pizza reach in coolers in kitchen soiled with food debris., Also, interior of coke cola cooler soiled. **Repeat Violation**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. One can of sliced black olives dented along top edge of can.
50-17-3    High Priority - Operating with an expired Division of Hotels and Restaurants license. Establishment open and operating preparing food for the public with license that expired June 1, 2025. **Repeat Violation** **Admin Complaint**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On prep table next to dough mixer, butter (63F - Cold Holding). Employee stated it has been out for approximately 1 hour. Inspector went over time as a public health control with employee and employee labeled butter pan for four hours. Inspector sent time paperwork to establishment. **Corrective Action Taken**
41-10-4    High Priority - Toxic substance/chemical improperly stored. Spray bottle of degreaser stored on dry storage shelf next to slicer equipment. Employee removed degreaser from shelf. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. In reach in cooler on cook line, pan of ricotta cheese and Alfredo sauce not date marked. Employee stated both are pulled from freezer and put in pan directly onto cook line. Ricotta cheese was put in cooler Sunday and Alfredo sauce was put in cooler Saturday. Employee put date marks on products. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. On clean dish rack, cutting boards (red, white and green) heavily stained with black. Also, wooden pizza board peeling. **Repeat Violation**
31B-03-4    Intermediate - No soap provided at handwash sink. No soap provided at handwash sink near front counter and handwash sink at end of cook line. Employee refilled both soap containers. **Corrected On-Site**
