A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor tiles missing and/or in disrepair.
At mop sink, multiple floor tiles cracked/missing. Operator stated she has work order in for repair. **Corrective Action Taken** **Repeat Violation**
Basic - Floors, walls and/or ceilings soiled/has accumulation of debris.
At cook line, floor and wall behind/under fryers have build up of grease and food debris.
At triple sinks, floor under triple sinks have build up of residue and debris. **Repeat Violation**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
At cook line, gasket on hamburger reach-in cooler soiled with food debris/stains. Operator stated she has work order to replace.
At cook line, gaskets on reach-in freezer drawers at fry station soiled with food debris. **Repeat Violation**
Basic - Reach-in cooler/reach-in freezer interior/shelves have accumulation of soil residues.
At cook line fry station, interior of reach-in freezer drawers soiled with food debris.
High Priority - Toxic substance/chemical improperly stored.
In back kitchen, chemicals on shelves stored above toilet tissue and paper towels. Operator had employee move. **Corrected On-Site**
Intermediate - No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
Operator not able to provide report with all employees hired over 60 days.
