The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed avocados stored over cream sauce in reach in cooler. Advised operator of proper storage. Operator moved avocados. **Corrected On-Site**
High Priority - Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee handled soiled pans in ware washing area, before handling clean pans without changing gloves or washing hands. Advised operator of proper handwashing procedures, employee washed hands. **Corrected On-Site**
High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Spatula washed with soap and water and placed onto flat top for future use. Advised operator of proper sanitization required when ware washing. Operator moved spatula to be cleaned in dishwasher. **Corrective Action Taken**
High Priority - Metal stem-type thermometer soiled. Evidenced by food debris on stem. Advised operator to clean and sanitize thermometer. Operator did. **Corrected On-Site**
Intermediate - Handwash sink not accessible for employee use at all times. Handwashing sink by back door, water turned off and out of order due to leaking pipe. No leak observed during inspection. Per operator hand washing sink is scheduled to be repaired.
Intermediate - Handwash sink used for purposes other than handwashing. Handwashing sink at front counter used as a dump sink, evidenced by ice in sink. Advised operator of proper use for handwashing sink.
