A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises.
1. Observed one dead roach in cleaned bowl stored at cleaned utensils rack in kitchen.
2. Observed one dead roach on cleaned plate stored at cleaned utensil rack at cookline in kitchen.
3. One dead roach observed on floor behind large oven in kitchen. **Warning**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
1. Employee purse stored on food prep table next to slicer in kitchen.
2. Employee cell phone observed stored on food slicer. **Repeat Violation** **Warning**
Basic - Equipment in poor repair.
1. Walk in freezer door gasket torn and hanging.
2. Large chest freezer door not attached to unit. **Repeat Violation** **Warning**
Basic - Observed clean utensils stored on cleaned utensils rack at cook line soiled with food debris. Operator removed and started to re wash at the time of inspection. **Corrective Action Taken** **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
1. Observed approximately three live roaches in castor wheels and on floor under food prep table next to large oven in kitchen.
2. Observed approximately seven live roaches in castor wheels and on floor underneath large oven in kitchen.
3. Observed one live roach on wall behind large oven in kitchen.
**Warning**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
1. Observed Cooked potato (106F - Hot Holding) on grill at cook line. Cooked less than one hour ago per operator. Operator turned up heat and began reheating to 165F at the time of inspection. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink used for purposes other than handwashing. Observed wiping cloths properly solution and wiping cloth stored in basin of hand sink in kitchen. **Repeat Violation** **Warning**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink in kitchen. Operator provided. **Corrected On-Site** **Repeat Violation** **Warning**
