Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chicken stored over ready to eat sauces in reach in cooler on cook line. 01C-05-4    Intermediate - Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Observed oyster tags not in chronological order in bag on kitchen side of kitchen door. **Repeat Violation**
01C-03-4    Intermediate - Clam/mussel/oyster tags not marked with last date served. Observed bag of oyster tags with no dares marking when last oyster was served. **Repeat Violation**
01C-10-4    Intermediate - Clams/mussels/oysters tag removed from original container prior to container being emptied. Observed 1 bag raw of oysters with no tag in reach in cooler in kitchen. Person in charge found tag under other bag of oysters. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed; pan and baster stored in hand wash sink on opposite side of wall near three compartment sink. Employee fill bus tub with water from hand wash sink. Inspector educated specific uses for hand wash sinks. **Corrective Action Taken**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at either hand wash sink in kitchen. **Repeat Violation**
31B-03-4    Intermediate - No soap provided at handwash sink. Observed no soap at hand wash sink on front line.
02A-01-5    Intermediate - Raw or undercooked oysters offered and establishment has no consumer advisory sign provided on wall, menu, placard, table tent or by any other written means. Raw animal foods must be fully cooked prior to service. Observed no consumer advisory of raw oysters for establishment. Inspector provided sign and sign was posted. **Corrected On-Site**
