Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup in walk in freezer under compressor.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.Observed scoop in water at 107F. Manager adjusted dial higher. **Corrective Action Taken**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed bar dish machine at 0ppm, sanitizer bucket empty. Manager changed and corrected to 50ppm. **Corrected On-Site**
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed butter chips out at 6:00am not marked. Manager marked container. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed no vacuum breaker on hose side of splitter.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed mixer shield and slicer blade guard with food debris on handles. Both cleaned during inspection. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed bar hand sink with strainer set up in it. Manager removed. **Corrected On-Site**
