Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed accumulation of rust buildup on storage shelves in dry storage room.
Basic - Stored food not covered.
-Observed an uncovered container with cooked potatoes stored in walk in cooler. Operator covered **Corrected On-Site**
Basic - Unwashed fruits/vegetables stored with ready-to-eat food.
-Observed case with unwashed tomatoes stored over open container with cooked potatoes.
High Priority - Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation.
-Observed container with cooked potatoes date marked 10/12/2025 and 01/08/2026. Operator determined that potatoes were cooked on 01/08/2026. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
-Observed at 3:10 p.m. cut tomatoes cold held at 45F. Per operator, tomatoes cut at 11:05 a.m. Operator placed ice packs on tomatoes for quick chill. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
-Observed sautéed onions (123F - Hot Holding); potato (125F - Hot Holding);. Per operator, both items cooked 3.5 hours before the inspection. Operator increased the temperature on unit for fast reheating. **Corrective Action Taken**
