Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Building components, attachments or fixtures in poor repair.
At front counter area, interior of cabinets are cracked and in disrepair.
At walk-in cooler, bottom of door in disrepair. **Repeat Violation**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
At prep area, cell phone on prep counter. **Repeat Violation**
Basic - Floors, walls and/or ceilings soiled/has accumulation of debris.
At front counter steam tables, wall has build up of dust and grease.
Floor at CO2 tank soiled. **Repeat Violation**
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container.
At front counter cashier area, measuring cup in bulk sugar container has handle touching product.
Basic - Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable.
In dry storage room, wood shelves not sealed.
Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom.
Throughout kitchen, front line and walk-in cooler, concrete floor not sealed. **Repeat Violation**
Basic - Working containers of food removed from original container not identified by common name.
At smoker area, 2 plastic containers with seasoning not labeled. **Repeat Violation**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
At prep area, employee handled cell phone, put in pocket, put on gloves without washing hands, then handled cookies and plastic wrap.
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
In walk-in cooler, raw chicken stored over raw beef brisket. Operator moved chicken to bottom shelf. **Corrected On-Site**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
At mop sink, right side hose bibb with no handle missing backflow preventer. **Repeat Violation** **Admin Complaint**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
At smoker area, interior of plastic seasoning containers have build up of encrusted seasoning on sides.
Intermediate - Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained.
Multiple employee training certificates are photocopies.
