A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor soiled/has accumulation of debris.
1. Observed heavy accumulation of grease and food debris underneath cookline equipment.
2. Observed heavy build up of old food debris underneath cookline food prep tables in kitchen. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
1. Hood filters at cookline in kitchen.
2. Heavy soil observed on underside of paper towel dispenser at hand sink in kitchen. **Repeat Violation** **Warning**
Basic - Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed soiled wet wiping cloth stored in food prep sink. **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
1. Observed one live roach running on kitchen floor.
2. Observed approximately 20 live roaches crawling on top and underneath Bain Marie, not in use, in kitchen. **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found.
1. Approximately 100 rodent droppings observed on bottom shelf of food prep table in kitchen.
2. Approximately 100 rodent droppings on top shelf of food prep table next to cookline in kitchen. **Warning**
