A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed ice bin at front service line soiled-including the lip of frame at opening of machine.
Basic - Equipment in poor repair.
Observed handle of rice cooker/ warmer in disrepair.
Also, gasket on reach-in cooler across from gyro machine in disrepair/ torn.
Also, interior right side door of reach-in cooler across from gyro machine in disrepair. **Repeat Violation**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed multiple gaskets on reach-in coolers on cook line soiled.
Also, exterior of pizza dough pans and exterior of seasoning bins in prep area and bakery area soiled.
Also, multiple filters in hood above gyro machine soiled. **Repeat Violation**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
Observed raw beef stored over ready to eat kibbeh with beef in reach in freezer at end of cook line near gyro machines-not all products commercially packaged. Operator had employee rearrange products to properly store. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed two portable cutting boards on cook line and multiple portable cutting boards on clean storage shelf in warewashing area soiled/ stained.
**Repeat Violation**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Observed no paper towels at hand wash sink next to mop sink. Employee replenished paper towels. **Corrected On-Site** **Repeat Violation**
