Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
Observed multiple ceiling tiles in kitchen, warewashing and cook line area soiled.
Basic - Ice buildup in reach-in freezer and/or walk-in freezer.
Observed ice buildup up in bottom of reach in freezer across from expo line. **Repeat Violation**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed exterior lip of bins of sugar and flour soiled.
Also, frame below door if large ice machine soiled.
Also, gasket on reach on both reach in deep freezers in kitchen area soiled.
Also, multiple filters in hood area above wok station soiled.
High Priority - Non-food grade paper/paper towel used as liner for food container.
Observed basil and raw chicken stored in recycled bags in reach-in freezer across from expo line. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed raw chicken, raw beef (44F-46F - Cold Holding) in top of reach-in cooler across from wok station. Observed containers of meat stored higher than chill line of cooler. Operator changed into more shallow pan and placed ice on both meats to chill. Retemped at end of inspection and both meats at 37F-38F **Corrected On-Site**
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed.
Observed Sanitizer Bucket (Chlorine 200+ppm) on cook line. Test strip turned dark purple. Operator diluted sanitizer solution and retested at 100ppm. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed portable cutting board at end of cook line soiled/ stained.
Also, nozzles on water machine in front service station soiled.
Intermediate - Handwash sink used for purposes other than handwashing.
Observed hand wash sink on cook line used for dumping. Observed noodles in hand wash sink. Operator cleaned out hand wash sink. **Corrective Action Taken** **Repeat Violation**
