Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed water stuck between containers on shelf over three compartment sink. **Repeat Violation**
08B-38-4    Basic - Food stored on floor. Observed plastic bottles of water stored on kitchen floor. Operator removed bottles from floor. **Corrected On-Site** **Repeat Violation**
03G-04-5    High Priority - Fish not held frozen before, during and after being packaged onsite using a reduced oxygen packaging method. See stop sale. Observed 38 pounds of salmon vacuum sealed inside Walk in cooler. As per Operator Salmon is received inside a container with ice, but not frozen.
03G-05-5    High Priority - Fish packaged in the establishment using a reduced oxygen method not bearing a label indicating that it is to be kept frozen until time of use. Observed 38 pounds of salmon vacuum sealed inside Walk in cooler. As per Operator Salmon is received inside a container with ice, but not frozen.
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Fish not held frozen before, during and after being packaged onsite using a reduced oxygen packaging method. See stop sale. Observed 38 pounds of salmon vacuum sealed inside Walk in cooler. As per Operator Salmon is received inside a container with ice, but not frozen. Also observed 12 pounds of cooked Salmon from the same vacuumed seal package in Food Establishment.
