A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. There is a cup with no handle inside a pan of spicy mayonnaise in the reach in cooler in the service area. **Warning**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. There is an employee cellphone on a prep table. Employee moved the cellphone. **Corrected On-Site** **Warning**
Basic - Food stored on floor. There is a case of chicken on the floor in the walk in cooler. Operator moved the chicken to proper storage. **Corrected On-Site** **Warning**
Basic - Silverware/utensils stored upright with the food-contact surface up. There is a rack of clean silverware stored with the food contact surface up. Operator returned the silverware to the dish station to be inverted and re-washed. **Corrected On-Site** **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm) **Warning**
High Priority - Roach activity present as evidenced by live roaches found. There are approximately 24 live cockroaches on the dishwasher, approximately 15 live roaches behind posters on the wall at the triple sink. **Warning**
