Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed gasket on reach in cooler next to hand wash sink near kitchen entrance door soiled.
Also, curtains used as door at kitchen entrance soiled.
Basic - Time/temperature control for safety food thawed in an improper manner.
Observed raw meats being thawed in standing water at triple sink. Operator turned on water to finish thawing meats. **Corrected On-Site**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
Observed employee washing triple sink out, then put gloves on and grab clean utensil. Discussed with operator and operator had employee washing triple sink hands at hand wash sink. **Corrective Action Taken**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
Observed open bag of raw shrimp stored over ready to eat french fries-not all products commercially packaged in reach in freezer across from fryers. Operator removed opened bag of shrimp to properly store in a different reach in freezer. **Corrected On-Site**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
Observed vacuum breaker missing from threaded hose Bibb at steamer equipment on cook line. **Repeat Violation** **Admin Complaint**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed cutting board on reach-in cooler next to fryer on cook line and portable cutting board near faucet at triple sink soiled/stained.
Also, nozzle of hot water urn at front service line soiled. **Repeat Violation**
Intermediate - Handwash sink used for purposes other than handwashing.
Observed hand wash sink on cook line and front service line used to store utensils and cleaning products. Operator removed silverware and sponges and brush from hand wash sink o properly store.
Also, Observed hand wash sink near kitchen entry curtains locked by large garbage can. Operator moved garbage can to in front of triple sink.
