A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed interior of ice machine soiled with slime like substance. **Repeat Violation**
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner.
Observed on shelf over ice machine at kitchen area metal pots and plastic containers not inverted. **Repeat Violation**
Basic - Employee beverage container in ice machine/ice bin.
Observed an employee's plastic water bottle stored in drinking ice at ice machine at kitchen area.
Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food.
Observed employees engaging in food preparation at front counter and kitchen area wearing bracelets and watches. **Repeat Violation**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition.
Observed an employee's plastic water bottle stored in drinking ice at ice machine at kitchen area.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Observed at handwashing sink at kitchen area no paper towels. **Repeat Violation**
Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food.
Observed establishment has no written plans to hold sushi rice under time.
Intermediate - Water treatment device has not been inspected or serviced according to manufacturer's instructions.
Observed water filter for ice machine at kitchen area missing service date. **Repeat Violation**
