Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-01-5    Basic - Bowl or other container with no handle used to dispense food. Observed plastic no handle container in the popcorn chicken in the reach in cooler. Operator removed container. **Corrected On-Site**
32-12-6    Basic - Covered waste receptacle not provided in women's bathroom. Observed trash receptacle in unisex bathroom with no lid.
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Observed employee working with food in the kitchen with no hair restraint.
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed scoop handle in contact with brown sugar in bulk in use container. Operator moved scoop. **Corrected On-Site**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Observed wet mop not stored to dry.
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed raw beef portioned in plastic container store above cooked chicken wrapped with Saran Wrap in the walk in freezer. Operator moved raw beef. **Corrected On-Site**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw eggs stored above unwashed onions in the walk in cooler. Operator moved the eggs. **Corrected On-Site**
02C-04-5    Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed raw beef cut and portioned in the walk in freezer not date marked.
