Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Hood filter missing from automatic fire suppression/exhaust system.
Observed missing filter in hood area. Gap in hood area **Repeat Violation**
Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris.
Observed tray in Interior of oven in prep area has accumulation of debris.
Also, interior of food warmer equipment on cook line soiled.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed exterior of ice cream freezer in area between cook line and bar area soiled.
Also, interior basin of hand wash sink on cook line and in walk-in-cooler soiled. Operator cleaned both sink basins **Corrective Action Taken** **Repeat Violation**
Basic - Wiping cloth sanitizing solution stored on the floor.
Observed bucket of sanitizer solution stored on floor next to dry food storage shelves. Operator placed another bucket under sanitizer. **Corrected On-Site**
High Priority - Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands.
Observed employee wearing gloves move trash can then started to peel onion. Discussed with employee, and employee washed hands and changed gloves. **Corrective Action Taken**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed raw fish (54F - Cold Holding)in reach-in cooler across from fryers. Operator stated fish was placed in cooler this morning. Operator noticed reach-in cooler was unplugged. Operator placed fish in nearby cooler and plugged in cooler to chill. Retemped at end of inspection and fish was 47F.
Also, heavy whipping cream (45F - Cold Holding) on front service line. Observed carton not placed down deep into ice. Server rearranged carton in ice to chill. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed two soiled vegetable wedgers stored on clean prep shelf. Operator removed both wedgers and placed in warewashing area to be cleaned.
Also, underside of shake spindle in bar area soiled. Operator cleaned during inspection. **Corrective Action Taken**
