A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
Observed employee phone and hat on top of single service utensils and plates table at front counter. Employees removed and stored properly during inspection. **Corrected On-Site** **Repeat Violation**
Basic - Equipment and utensils not properly air-dried - wet nesting.
Observed wet nesting inside clean utensils containers under cold holding unit next to cashier area.
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container.
Observed metal scoop handle touching sugar inside plastic container next to coffee machine at front counter. Operator removed metal scoop from container at the time of inspection. **Corrected On-Site** **Repeat Violation**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
Observed clean utensil inside standing water at a temperature of 125F. Operator replaced water, new water thermometer 138F. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed hot holding unit gaskets soiled next to hand wash sink o the right side of front counter.
Basic - Stored food not covered.
Observed several container of frozen fruits stored uncovered inside reach in freezers at front counter. Operator covered them during inspection. **Corrected On-Site**
Basic - Time/temperature control for safety food thawed in an improper manner.
Observed frozen yuca and corn casserole thawing at room temperature on top of preparation table in front of stove at kitchen area. Employee put them inside reach in cooler in front of stove at kitchen area. **Corrected On-Site**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
Observed Fried Chicken (158F - Hot Holding) inside fryer basket at kitchen area. As per employee for less than 10 minutes. Employee placed fried chicken inside oven to reheat. Also observed Black Beans and Rice (131F - Hot Holding) inside cooking machine next to three compartment sink at kitchen area. As per employee for less than 2 hours. Operator reheated during inspection Black Beans and Rice (202F - Reheating) **Corrective Action Taken** **Repeat Violation**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
Observed at hose bibb next to reach in freezers in front of stove at kitchen area. Operator put the vacuum breaker on hose bibb during inspection. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed can opener blade soiled at preparation table at kitchen area. Operator removed, washed and sanitized during inspection. **Corrected On-Site** **Repeat Violation**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
Observed assorted desserts not dated marked inside reach in coolers at front counter. As per operator prepared yesterday. Operator dated marked them during inspection. **Corrected On-Site** **Repeat Violation**
Intermediate - Spray bottle containing toxic substance not labeled.
Observed windex spray bottle not labeled under steam table in front of kitchen entrance at front counter. Operator labeled during inspection. **Corrected On-Site**
