Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed cutting board with grooves and no longer smooth and easily cleanable stored on drying rack across from dish machine. **Repeat Violation**
14-71-4    Basic - Duct tape used to repair nonfood-contact surface. Observed duct tape used to repair ceiling of walk-in cooler. **Repeat Violation**
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed white plastic containers stacked on top of each other with visible signs of moisture and unable to air dry stored above server station. **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed gap with visible light shining through at bottom left of rear exit door. **Repeat Violation**
14-38-4    Basic - Food storage container/container lid cracked or broken. Observed cracked container stored on top rack of drying rack next to prep area.
16-46-4    Basic - Old labels stuck to food containers after cleaning. Observed old labels stuck to clean containers stored in server reach in cooler.
33-16-4    Basic - Open dumpster lid.
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed foods on cook line held on time as a public health control with no time markings. Employee stated food items were cooked 15 minutes prior and added time markers. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed 2 metal pans stored in hand wash sink at end of cook line. Person in charge removed pans. **Corrected On-Site**
