Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Observed plastic container with cooking oil stored on the floor at preparation kitchen.
14-69-4    Basic - Ice buildup in reach-in, located at preparation kitchen.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hood filters soiled. Observed reach in freezer gaskets soiled.
22-16-4    Basic - Reach-in freezer interior have accumulation of soil residues.
29-19-4    Basic - Standing water in floor drain/floor drain draining very slowly at dishwasher area.
08B-12-5    Basic - Stored food not covered. Observed ice cream container not covered in chest freezer, located at preparation kitchen.
29-17-4    Basic - Waste line missing at soda gun holster.
29-11-4    Basic - Water leaking from pipe, located at hand sink.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.

22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dishwasher (Chlorine 0ppm).
