Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. There is slime and a black mold like substance on the ice chute in the ice machine. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. There is a heavy buildup of grease on the hood filters. **Warning**
Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. The green shelving in the walk in cooler is rusted and pitted. **Warning**
High Priority - Nonfood-grade bags used in direct contact with food. There are multiple raw animal proteins in direct contact with nonfood-grade to go bags in the two door reach in freezer. **Warning**
High Priority - Raw animal food stored over canned/bottled drinks. In the walk in cooler raw beef is stored above bottles of soda and water. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In the two door reach in cooler by the walk in cooler bacon wrapped shrimp is stored above celery, cheese and cut cabbage. **Warning**
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the bottom of the make table cooler on the cook line raw sausage is stored above whole muscle beef. **Warning**
