A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.

High Priority - Rodent activity present as evidenced by rodent droppings found.
1. Observed approximately 15 rodent droppings in kitchen under neath right flip top cooler.
2. Observed approximately 20 rodent droppings in kitchen under storage wrack.
3. Observed approximately 15 rodent droppings in storage area underneath ice bin and under storage shelves.
4. Observed 3 rodent droppings under dish wrack Operator began removing rodent droppings and cleaning and sanitizing the area **Corrective Action Taken** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Wait station ice bath; pork won ton (72F - Cold Holding). Per operator Won Tons transferred from other unit less than four hours ago. Observed ice bath melted. Operator placed food in freezer to quick chill. Food not prepared or portioned today **Warning**
Intermediate - Employee washed hands in a sink other than an approved handwash sink.
Observed employee wash hands in prep sink. Reviewed proper hand washing procedures with employee and manager. Employee washed hands in hand sink **Corrected On-Site** **Warning**
Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection.
Flip top cooler 4 at 3:30pm cooked cabbage 54F ambient cooling for 3 hours to 54F at 4:19pm// under unit At 3:40pm cooked chicken 53F heated cooling for 3 hours to 52F at 4:20pm. At this rate proper heated cooling from 135 to 41 in 6 hours will not occur. Observed food covered cooling. Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
