Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-74-7    Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed 1 reach in across cook line no longer in use. No TCS foods stored inside, used as dry storage.
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed in warewash area.
08B-38-4    Basic - Food stored on floor. Observed soy sauce, oil and case of sauce on floor in dry storage area.
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed in chest freezer across cook line.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed on cook line. Chef removed from door. **Corrected On-Site**
51-13-4    Basic - No Heimlich maneuver/choking sign posted. Observed no choking poster. Inspector provided via email. **Corrective Action Taken**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soiled gaskets in bar cooler.
14-20-4    Basic - Ripped/worn tin foil used as shelf cover. Observed across cook line.
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed 6 110 oz cans of beans, West Creek.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed in lowboy, raw eggs behind sliced tomato. Chef corrected during inspection. **Corrected On-Site**
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Observed no form or kit; inspector provided via email. **Corrective Action Taken**

31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed none at cook line hand sink.
