A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine by warewashing machine. **Repeat Violation** **Admin Complaint**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Walk in cooler fan cover heavily soiled with dust/mold like substance.

High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw whole shell eggs stored on top of box of ready to eat soybean paste in walk in cooler. High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee handle raw chicken on cook line and then immediately handle triple sink controls and clean plates without first disposing gloves and washing hands. Reviewed handwashing and gloves change requirements with operator.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. tofu (51F - Cold Holding) not prepped or portioned today stored on top of shallow bed of ice at soup prep area. Per operator, item has been held for less than 2 hours. Operator added more ice to container to chill. **Corrective Action Taken**
Intermediate - Employee washed hands in a sink other than an approved handwash sink. Observed employee wash hands in triple sink. Reviewed handwashing sink requirements with operator.
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Dishwashing racks heavily soiled with limescale/food debris build up at warewashing area.
Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Provided 3 certificates. Approximately 6 food handling employees working at time of inspection.
