Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-24-4    Basic - Buildup of food debris/soil residue on equipment door handles. Observed walk in cooler and walk in freezer door handles are soiled at time of inspection.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee drink on cutting board on cooks line. Employee removed during inspection **Corrected On-Site**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed tongs stored on oven door handles on cooks line at time of inspection.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine testing at 0ppm. Operator discovered hose to sanitizer bucket wasn't inside sanitizer. End 100ppm chlorine during inspection. **Corrected On-Site**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored over raw bacon on cooks line. Operator moved chicken to bottom drawer under bacon at time of inspection **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed stained cutting boards on cooks line at time of inspection.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed kitchen utensils in hand wash sink by triple sink. Employee moved utensils during inspection. **Corrected On-Site**
