A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Buildup of food debris/soil residue on equipment door handles. Two compartments reach in cooler, soil residue in two handles. Employee cleaned. **Corrected On-Site**
Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Packages of grouper fish, per manager fish on thawing two hours ago, employee removed from bags. **Corrected On-Site**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Open bottle of water, employee removed **Corrected On-Site**
Basic - Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. Employee cooking orders and drinking water from open bottle , after manager instructed, employee discarded gloves and washed hands. **Corrected On-Site**
Basic - In-use knife/knives stored in cracks between pieces of equipment. 3 knives between corner of prep table and compartment sink. Employee removed. **Corrected On-Site**
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Plastic cup used to dispense ice, employee removed. **Corrected On-Site**
Basic - Time/temperature control for safety food thawed in an improper manner. Packages of grouper fish being defrost in standing water. Employee removed from water.
High Priority - Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. Server bring soiled plates, then grab clean plates with new customers orders. After manager instructed, employee washed hands and put in new pair of gloves. **Corrected On-Site**
