A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Dishmachine testing at 0ppm during inspection. Person in charge set up triple sink to sanitize at 200ppm during inspection. **Corrective Action Taken** **Warning** - From follow-up inspection 2026-01-20: Dishmachine in use still testing at 0ppm. Person in charge states will call for service. Explained to operator establishment needs to utilize triple sink to sanitize until serviced. **Admin Complaint** - From follow-up inspection 2026-01-23: Operator needs more time to repair. **Time Extended** - From follow-up inspection 2026-01-28: Establishment not utilizing dishmachine for sanitizing, are utilizing triple sink per person in charge. Will not utilize unless unit is repaired and sanitizing at appropriate ppm. **Time Extended**
High Priority - - From initial inspection : High Priority - Live, small flying insects found.
Observed 5 flying insects in dishpit area.
Observed approximately 10 flying insects near dirty dishes, wet sponge by triple sink area.
Observed 3 flying insects bar area. **Warning** - From follow-up inspection 2026-01-20: Observed approximately 7 flying insects in kitchen near dishmachine and dirty dish table. **Admin Complaint** - From follow-up inspection 2026-01-23: Observed two flying insects in bar area.
